Broccoli Pumpkin Soup

Ingredients:
- 1 cup broccoli florets
- 1 cup pumpkin cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- Vegetable stock or water
- Salt & pepper to taste
- Lemon juice, and coriander/basil leaves for added freshness
Method:
- In a pot, saute onions and garlic until translucent.
- Add pumpkin cubes and broccoli florets; cover with vegetable stock or water.
- Alternatively, you can roast the pumpkin cubes and broccoli before adding them to the soup for a richer, caramelized flavor.
- Bring to a boil; simmer until vegetables are tender (~15 minutes).
- Blend until smooth; season with salt & pepper, garnish with fresh basil or coriander leaves and serve hot with a squeeze of lemon juice.
